Elderflower Cordial Recipe

It's that time of the year again! A short window of time where elderberry bushes burst into bloom. I have to admit, this was my first time actually using the flowers to make cordial- and I'll definitely make more next year too. The method is fairly simple to prepare, and the result is a fresh, floral and citrus flavoured syrup to add to desserts and drinks. We used a jar of this at my 18th party to add to gin and tonics and it went down a treat! I've heard it tastes lovely with prosecco too. Enjoy~ 

Ingredients

15-20 heads of elderflower, 500g caster sugar, 4 tablespoons maple syrup, 2 lemons

Method

Gently wash the elderflowers, making sure to remove any bugs!
Place the sugar, maple syrup and 1 litre of water in a large saucepan and bring to the boil, then turn off the heat once all of the sugar has dissolved.
Place the flowers downwards into the sugar-water mix. 
Add the zest and juice of one lemon. Slice the second lemon and add those too.
Cover with a lid, and leave to infuse for at least 24 hours. 
Strain the cordial through a muslin cloth or clean tea towel, then transfer into sterile bottles.
