Energy Ball Recipe- Easy, No Bake, Vegan AND Gluten Free

Hello friends...today I've got a super easy and healthy recipe for you, in fact it's so easy that I feel I can hardly call it a recipe! 
Energy balls make great snacks to enjoy with a cup of coffee when you need a boost, as they're packed with vitamins, fibre and natural sugars. All you need is your ingredients and a food processor, then you're ready to have a tasty snack in just a few minutes.
This recipe is easily adaptable so you can add in whatever takes your fancy- nut butters, seeds, goji berries, bananas, oats... the list goes on!
All of the ingredients here have been bought from my local plastic free shop too, so this recipe is an all-round winner. 
I hope you enjoy it...

Ingredients...

200g dates
125g glace cherries
2 tbsp flax seeds
3 tbsp desiccated coconut (plus extra for rolling)
2 tsp vanilla extract
2 tsp cocoa powder

Method...

1. Put the dates in a food processor and chop until the dates are in small pieces.
2. Add all the remaining ingredients and pulse until combined, the mixture should form a rough paste.
3. Shape into walnut size balls and roll in coconut.
4. Chill for 30 minutes to firm up, then enjoy!
Store in an airtight container in the fridge.
