Home-made Granola Recipe

A new recipe today... I think this is the first breakfast recipe actually, rather than just cakes and bakes, so hopefully there'll be more on the way soon along with some savoury recipes too! This granola recipe is so simple and uses lots of natural ingredients so it will keep you full all morning. I've written the basic recipe for the oat clusters, and then it's really a pick-and-mix of all of your favourite fruits, nuts and seeds. Personally, I like to serve it with soya milk or a dollop of natural yogurt and then maybe a sliced kiwi or banana too. You could also have a spoonful of it as a topper on porridge as well!

Ingredients

1 tbsp olive oil, 3 tbsp golden syrup, 175g / 6 oz oats, 2 tbsp of sunflower seeds
Your choice of: banana chips, raisins, sunflower seeds, chopped nuts, flaked almonds, coconut, pumpkin seeds, hazelnuts, dried apricot-papaya-pinapple-apple

Method

1. Preheat the oven to 200C
2. Heat up the olive oil and syrup on a low-medium heat for a couple of minutes until they melt together.
3. Turn off the heat and stir in the oats and sunflower seeds. I added in a few tablespoons of linseed at this point too because we had them in the cupboard- optional!
5. Spread on a baking tray and bake in the oven for 8-10 minutes until turning golden on the edges. Leave to cool slightly.
6. In a large bowl, stir together the oat mixture along with a handful of each of your chosen fruits, nuts and seeds. For mine I added banana chips, raisins, apricots, flaked almonds and some more sunflower seeds but it's really up to you!
That's it- Enjoy! 
Store in an airtight container and you should get around 5-6 bowls of cereal out of this depending on serving size.
