White Chocolate Chip Cookies

A few weeks ago, I tried my first white chocolate chip cookie(s). It's safe to say I actually did ask myself 'how on earth have I managed not to try these before?!'. Because of that, it probably comes as no surprise that had to share them on here and quite well timed too seeing as it was biscuit week on Bake Off.
The basic recipe is the same as my normal Chocolate Chip Cookies I made back in May, but for these you simply have to swap the milk chocolate to white chocolate. For these I prefer using bigger chocolate chunks so I buy the bars of white cooking chocolate and chop them up using a kitchen knife. After baking for 8-10 minutes, the cookies will be fairly soft, but take them out when they go golden because they will firm up when they cool (whilst still leaving slightly soft cookie dough centres!)
